1, 2, 3 Banana Bread

This is one of the easiest banana bread recipes I’ve ever tried. And one of the yummiest. 

It’s literally three things. 

  1. Box of yellow cake mix
  2. Eggs
  3. Ripe bananas

Easy to remember. Easy to buy. Easy to make. Easy to put in my belly. 

I like to make this for the weekend when we all just want something yummy to eat. It makes you feel good. 

And yes, I’m a big make it yourself kind of person, and if you are, definitely make your own cake mix, (this one is easy-Homemade Yellow Cake Mix) but in a pinch this works too. 

Start by throwing everything in the bowl. 

Then start mashing. I use a potato masher to get all those bananas mushed up and evenly distributed throughout the bread. 

When it looks like banana pudding, you’re done. 


Butter/spray/grease a pan.  I gave up spray awhile ago for oil or butter. Works just as well, but without all the chemicals. Metal or glass will work for this recipe, but you might lower the temp a bit for glass. Mine always seem to need longer to cook through. 


Pour that goodness in the pan. 


Then let it cook 325-350 degrees 35-45 minutes or until an inserted toothpick comes out clean from the middle.  Watch it and don’t just set a timer. Every oven is different. Wait for that toothpick to be completely clean. You don’t want liquid bread. 

Gross. 

If you find the top browning too much and middle is not cooked, lower the temp and check it in a few more minutes. 


Oh boy. 


It’s lovely. My kids love this stuff.  Gets them eating, which is never an easy feat, plus I have something to do with those too ripe bananas my kids won’t touch because there’s a brown spot on them. 

Sweet. Moist. Nice crust. Banana-y. Serve with a side of bacon or sausage and you’re good to go!!  Enjoy. 
Ingredients:

  • 1 box of yellow cake mix
  • Two eggs
  • Three ripe bananas

Directions:

  1. Preheat over to 350 degrees (325 for glass) and butter a loaf pan and set aside. 
  2. Mix cake mix, bananas, and eggs in medium sized mixing bowl. Use a masher to distribute bananas throughout the bread. 
  3. Pour batter into greased pan. 
  4. Bake for 35-45 minutes or until toothpick comes out clean.
